Plant Based Supper Club

Almost 100 guests at Chester’s Restaurant 1539 were treated to an exclusive vegan dining experience on Thursday 30 January, as the award-winning city centre venue hosted their first Plant Based Supper Club in association with allaboutgreens – specialists in plant-based dining and education.

Those in attendance were welcomed with a Kombucha themed cocktail on arrival and creative canapes, including BBQ jackfruit tacos. Acoustic singer, Amber Prothero’s, soulful sound provided the perfect backdrop to the evening, creating a relaxed ambience for guests.

Dynamic duo, Michelin trained chef Rupert Worden and serial foodie Lisa Hinze, who are the brainchild behind allaboutgreens, shared anecdotes of their journey into plant-based cooking and an insight into the evening’s menu, before guests began their gastronomic experience.

The first of four courses was a colourful beetroot tartar, topped with a carefully crafted carrot and orange yolk. This was followed with crispy tempura banana blossom and a flavoursome cumin pea foam.

The highlight of the evening’s menu, magnificent charred miso king oyster mushrooms, served with a sticky mushroom pudding, truffle mash, pumpkin puree, rainbow kale and a drizzle of red wine jus. With one guest commenting, “it was absolutely delicious – I could eat the sticky mushroom pudding every day”.

For those with a sweeter tooth, Valrhona chocolate and fudgy brownie with a cacao avocado cream and mango sorbet, provided a show-stopping close to a flavour filled evening.

Restaurant 1539, located within the picturesque setting of Chester Racecourse with views of the famous Roodee, has long been established as one of the finest eateries in the city centre.
